Ginger & Chilli Chicken Kebabs with Grapefruit & Quinoa Salad

Spring is certainly here this week so now it’s time to think about some light and colourful to eat. Kebabs are great for lunch, dinner, BBQ and are really healthy too. I love pink grapefruit but sometimes get fed up eating it on its own so I added this to the salad instead of a dressing and it was delicious. A nice balance of sweet and sour plus excellent for weight loss as it’s low in calories and full of water to really cleanse the kidneys.
