Stuffed Quinoa and Tuna Peppers (Gluten Free)

It can be hard to stay away from bread at lunch time so when I looked in the fridge and it was quite bare apart from some peppers I had to get some inspiration. This is really simple, full of protein to keep me fuller for longer and very tasty. Peppers are full of vitamin C and because they are being roasted they retain most of their nutrients so perfect to keep you immune system strong throughout winter. Vio Life Cheese is made from coconut oil and is a great dairy alternative to cheddar.
