Vegetable Fritters with pumpkin seed coleslaw

This is a great light dinner, lunch or even breakfast and it’s a great (no meat) option. The coleslaw is really lovely and is made from pumpkin seeds which are the only seed that is alkaline forming so are perfect to eat when detoxing or trying to lose weight. Pumpkin seeds are filled with lots of minerals including phosphorus, magnesium, manganese, iron and copper and are a good source of vitamin K. They contain phytosterols, compounds that that have been shown to reduce levels of LDL cholesterol plus L-tryptophan, which helps with sleeping and lowering depression.

Lastly pumpkin seeds are high in zinc, making them a natural protector against osteoporosis plus also help to combat sugar cravings.
