I don’t know about you but I am not keen on cold salads in winter! Solution add something warm to the usual cold leaves…the hot and cold effect is strangely comforting. Normally what I do is use my left over vegetables from the night before. This one was roasted red, yellow and green pepper, courgette & garlic with a drizzle of olive oil. Coupled with spinach, rocket, watercress, cucumber, cherry tomatoes, avocado, celery and a little sweetness from an apple. You can simply add chicken, turkey, prawns or boiled eggs for protein to keep you fuller for longer.
