Curried Parsnip & Lentil Soup

This is a really yummy soup and the kids loved it to as it’s not to spicy and has a great consistency just like potatoes. Parsnips provide an excellent source of vitamin C, fibre, folic acid, pantothenic acid, copper and manganese. Curry powder contains curcumin and turmeric which act as an anti-inflammatory and help prevent disease.
